Cooking steps:
1. Cut the tofu into small cubes.
2. Peel the peas, mince the pork, slice the garlic, chop the green onions and ginger.
3. Once the water’s boiling, add a little salt, pour the tofu and cook for 5-6 minutes. Blanch the tofu in advance to remove the fishy smell of the tofu. Add a little salt to the water so that the tofu is not easily broken.
4. Pour peas into boiling water and cook for 5 minutes.
5. Add oil to the pot, pour the minced meat and fry over low heat until the color turns white.
6. Add Sichuan bean paste, chopped green onions, minced ginger and garlic slices. Stir-fry evenly.
7. Pour in tofu, add half a bowl of water, light soy sauce and cooking wine. After boiling, turn to low heat and cook for 4-5 minutes.

Tips:
It is best to choose old tofu, which is not easy to break. Blanching tofu can remove the smell of beans, add a little salt to the water so that the tofu will not break.
