Today I will share a cucumber dessert, a simple homemade Chinese cucumber cold cake. A refreshing and delicious summer snack for weight loss.
Chinese cold cake originated in Yibin, Sichuan, and is a traditional snack with special characteristics. It is said that it has a long history of more than 1300 years, and how it is produced has been unproven, but the cuisine is always accompanied by some legendary stories. Chinese cold cakes are crystal white. When eating, it can be combined with brown sugar, fruit, and even spicy taste. No matter how hot the weather is, as long as you eat the cold cake, it will make your liver and spleen smooth and refreshing.
However, the cucumber dessert shared today is a slightly darker green, but it is still very transparent, wrapped with a layer of coconut powder, cool and refreshing. Coupled with the white bean jelly powder (or Mung bean starch), it has the effect of relieving heat.
Cooking steps:
1. Prepare all ingredients. Peel the cucumber and cut it into small pieces. Put the cucumber pieces in a blender, add about 150g of water and stir. Then filter out the residue with a filter. Add white bean jelly powder and mix well.
2. Add 250g of water to the pot, pour the sugar and heat until melted.
3. Pour in cucumber white jelly juice and bring to a boil, then turn off the heat.
4. Pour into a plate and cool until solidified. Cut into small pieces and wrap with coconut powder.
It’s delicious without coconut powder.

- moderate coconut powder
