Ingredients
  

  • 3 potatoes
  • 500 g pork ribs
  • green onion
  • 1 piece of ginger
  • 1 star anise
  • 1/2 tbsp soybean paste
  • 3 tbsp peanut oil
  • 2 tbsp soy sauce
  • 1 tsp salt

Instructions
 

  • The ribs are stewed in advance and set aside, there is some soup inside, it is more delicious to stew with potatoes.
  • Wash and peel potatoes and cut into small pieces.
  • Cut green onion and ginger.
  • Pour peanut oil into the pot, add chopped green onion, ginger slices and star anise, fry until fragrant.
  • Pour in potato pieces, add half a tablespoon of soybean paste and stir-fry for 2 minutes.
  • Add the right amount of water, just submerge the potatoes, add soy sauce and mix well.
  • Pour pork ribs and ribs juice, cover the pot and boil, then simmer on medium-low heat until the potatoes are soft and roasted.
  • Season with salt and remaining green onion.

Notes

Here is the stewed pork ribs. If you use raw pork ribs, you should stew the pork ribs (about 40 minutes) before cooking this dish.
If you like spicy food, you can add some peppers.
After adding soybean paste, stir-fry quickly to prevent sticking to the pan.
