Ingredients
  

  • 750 g flower clams
  • a handful of spring onions
  • a few drops of mustard oil
  • 2 cloves of garlic
  • 3-4 dried chili peppers
  • 2 tbsp light soy sauce
  • 3 tbsp oil
  • moderate salt

Instructions
 

  • 1. Put fresh clams in clean water, add a little salt, a few drops of oil, and soak for half an hour to let it spit out all the dirty things.

    2. Prepare spring onions, garlic and dried chili peppers.

    3. Add water to the pot and boil, pour the clams and cook until the shell is opened.

    4. Rinse the clams in clean water, then peel off the meat of the clam and put it into a container for later use.

    5. Add 3 tablespoons of oil to the pot, heat to smoke, pour the hot oil in the bowl of dried chili peppers.

    6. Put spring onions in a container with clam meat, add garlic and fried chili oil, add a few drops of mustard oil, mix well and enjoy.

Notes

The flower clams themselves are very umami, do not add gourmet powder while mixing, and put less salt.
