1. Thaw the shrimps in water. Prepare snow peas in advance.
2. Peel and cut carrots into slices, mince garlic. Put the thawed shrimp into a bowl, add a little salt, cooking wine, pepper and dried starch. Mix and marinate for 10 minutes.
3. Once the water's boiling, we're gonna parboil the snow peas and carrots. Add a little salt, a few drops of edible oil, so that the color of the snow peas can be greener.
4. Cool the snow pea in cold water to keep it crisp and tender.
5. Add oil to the pan, pour the shrimps and stir-fry until the color turns red.
6. Add minced garlic and stir-fry for a while.
7. Finally, add the snow peas, carrot slices, salt, chicken essence and stir-fry quickly over high heat. Then pour the right amount of water starch and stir evenly.
Notes
When blanching the snow pea, add a little salt and a few drops of oil to make the snow pea greener, and then cool it in cold water to keep it crisp and tender.
